Bacon & Cheese Quiche

This is one of my favorite dish to make and it is always a hit in the house! It may sound like a ton of work and it may feel like it is easier to just buy it at Costco … trust me, it is much better when made from home!

So simple and so delicious, you’ll find this quiche to be one of your favorite go to recipes for any meal. The texture is light and fluffy…almost like a mousse.  And the crust is so buttery and flaky. You can use a store bought crust if you want to save time but make sure it is a deep dish pie crust.  Oh I know it has lots of cream and bacon but if you don’t plan on eating the whole thing at one sitting, you should be just fine … and trust me, it tastes so much better the next day! LOL

  • To prepare pastry, in a medium bowl, mix together four and salt. Cut shortening into flour mixture until coarse crumbs form. I personally use my KitchenAid and it works amazingly well.
  • Add water, 1 teaspoon at a time, tossing with a fork, until a dough forms. Shape dough into a disk, wrap in plastic wrap, and chill for 30 minutes.
  • On a floured surface, using a floured rolling pin, roll dough into a 10-inch circle. Fit into a 9-inch pie or quiche pan. Trim edges.
  • Preheat oven to 375 degrees F. Prick dough with a fork. Line with foil and fill with pie weights or dried beans. Bake for 10 minutes. Remove the foil and weights. Bake until lightly golden, about 5 minutes. Transfer to a wire rack to cool.
  • To prepare filling, in a skillet, cook bacon over medium heat until crisp, 8-10 minutes. Transfer to a paper towel to drain. Once cooled, crumble into pieces. In another skillet, pour olive oil over medium heat. Add onion; cook, stirring occasionally, until softened, 6-8 minutes. Remove from heat; cool.
  • Whisk together eggs, half-and-half, cream, salt, pepper, nutmeg, bacon and 1 cup of cheese. Sprinkle 1/2 cup of cheese over crust. Top with onion. Pour egg mixture on top.
  • Bake quiche until golden and custard is set, 35-45 minutes. let rest for 5 minutes. Enjoy :)


Baking Tip: Substitute leftover roast beef or turkey or ham for the bacon, or use leftover carrots, potatoes, or peas for a vegetarian quiche.
